Easter Rice Krispies Nests are an easy Rice Krispies-inspired treat for Easter weekend. Like these Cadbury Mini Egg Rice Krispies Treats, these nests are also made with a buttery and melted marshmallow cereal base, and molded into mini muffin trays.

Once set, these nests are then filled with decadent Nutella spread, colored coconut shreds, and topped with cute mini Cadbury eggs! Serve these adorable Easter treats with Easter M and M Cookies and other holiday sweet treats.

Rice Krispies mixture – This consists of unsalted melted butter, salt, mini marshmallows, vanilla extract, and Rice Krispies cereal. If you use salted butter, omit the salt from this mixture.

Thin coconut shreds – Sweetened or unsweetened, to be colored with your choice of gel food coloring.

Gel food coloring – I’ve used pink and green gel food coloring, but you can use your colors of choice.

Nutella – Cadbury spread is a good alternative.

Mini candy eggs – I’ve used 54 mini Cadbury eggs (3 mini eggs per nest).

Swaps

  • Flavoring – Use almond extract or a different extract to flavor the Rice Krispies nests. Melted milk chocolate could also be added to the mixture for a different flavoring.
  • Cereal – Cocoa Rice Krispies, Cocoa Pebbles, or Fruity Pebbles can be used instead of regular Rice Krispies cereal.
  • Mini candy eggs – Use another brand of mini candy eggs, like mini Robbin eggs.
  • Coconut shreds – Edible Easter grass from Walmart or Amazon can be used instead of coloring thin coconut shreds. Sprinkles are another option, or you can omit the coconut shreds completely.
  • Filling – Instead of the Nutella spread filling you can use another chocolate spread, Biscoff cookie butter, or peanut butter. Pipe freshly made buttercream frosting and add coloring to it for fun for something completely different!

EQUIPMENT

You’ll need two 12-cup muffin tins, a large pot, rubber spatula, and a Ziploc bag for each color used.

HOW TO MAKE

These Easter Rice Krispies Nests are super easy to make with a Rice Krispies mixture, colored coconut shreds, and mini Cadbury Easter eggs! Follow these simple steps for fail-proof results!

Preparations

Lightly grease two 12-cup muffin tins and set aside.

Cooking Instructions

Step 1
Melt the butter in a large pot over low heat and add salt. Add the mini marshmallows and stir until melted. Remove the pot from the heat and add the vanilla extract.

Gently fold in the Rice Krispies cereal and fold until the cereal is fully coated.

Step 3
Scoop 3-4 tablespoons of the Rice Krispies mixture into each mini muffin mold, pressing gently down with your fingers. There should be a small dip in the center of each cup for the Nutella. Set the muffin tins aside for 30 minutes at room temperature to set.

Step 4
While the nests set, start to make the colored coconut shred by placing the coconut shreds in a Ziploc bag with 1-3 drops of gel food coloring. When using more than one color like I have, divide the coconut shred between additional bags along with food colorings.

Close the bag/s and massage the coconut shreds until the gel food coloring has rubbed fully onto the coconut shreds. Set aside.

Step 5
Start to assemble the Easter Rice Krispies nests by adding a spoonful of Nutella into the center of each next. Sprinkle the colored shreds over the top of the Nutella.

Step 6
Top each nest with 3 mini Cadbury Easter eggs. Repeat this process for other colors of coconut shreds. Use a butter knife or a skewer to remove each nest onto a serving plate.

COOKING TIPS

Make sure to lightly grease each mini muffin mold to help remove the set and assembled Easter Rice Krispies Nests with ease. It can also be helpful to grease your own hands or fingers to prevent the Rice Krispies mixture from sticking to your hands and fingers when you press it into the molds.

Easter Rice Krispies Nests

These cute little nests are individual rice krispies treats filled with Nutella spread, then topped with colorful shredded coconut and mini Cadbury eggs.

Ingredients

  • 4 tablespoons unsalted butter (half a stick)
  • ⅛ teaspoon salt
  • 4 cups mini marshmallows (about ¾ of a 10 oz bag)
  • 1 teaspoon pure vanilla extract
  • 5 cups Rice Krispies cereal
  • 1 ½ cups thin coconut shreds
  • Gel food coloring in colors of choice
  • 1 cup Nutella or Cadbury spread
  • 54 mini cadbury eggs (about 1 ¼ cup)

Instructions

  1. Lightly grease two 12-cup muffin tins and set it aside.
  2. In a large pot over low heat, melt the butter and mix with salt.
  3. Add the mini marshmallows and continue to stir over low heat until melted.
  4. Remove the pot from the heat and stir in the vanilla extract.
  5. Add the rice krispies cereal and gently fold together until the cereal is evenly coated with the melted marshmallow mixture.
  6. Scoop 3-4 tablespoons of the rice krispies mix into each of the pockets of the muffin tin.
  7. Use your hands to press them down and mold them into the shape of the tin. Leave a small dip in the center to fill with Nutella. Allow it to set at room temperature for 30 minutes.
  8. As it sets, prepare the coconut shreds. Add the shredded coconut into a zip top bag along with 1-3 drops of food coloring. If using more than one color, split the amount of coconut shreds into two separate bags, one for each color.
  9. Close the bag and massage the contents together until the color has rubbed onto the shredded coconut. Set aside.
  10. Once the nests have set, place a spoonful of Nutella on top of each Rice Krispies nest.
  11. Sprinkle the colored coconut shreds over the Nutella and top each one with 3 mini Cadbury eggs.
  12. Use a butter knife or skewer to remove each nest from the tin. Place on a serving plate.

Notes

  • You can use salted butter if you desire. Just remember not to add extra salt.
  • You can swap the regular rice krispies for cocoa krispies or another cereal like cocoa pebbles or fruity pebbles.
  • Instead of Nutella, use another spread such as Cadbury spread, Biscoff cookie butter, or peanut butter. You can also make your own.
  • If you don’t want to use coconut shreds, you can purchase edible grass from Walmart or Amazon which comes in different flavors. You can also opt to use sprinkles instead. Or just omit it entirely and top the Nutella with the mini eggs.

STORING
These rice krispies nests are best eaten the same day but you can store leftovers in an airtight container on the counter for up to 2 days. I do not recommend refrigerating as it will harden.
