Snowball cookies with Cranberry and Pistachio

Bigfoot, Sasquatch, Abominable Snowman… so elusive and hard to find…AND YETI …. we have their balls- Snowball cookies with Cranberry and Pistachio!  Enjoy this classic Christmas Cookie with a twist.  Pistachio nuts and cranberries make these super easy snowball cookies fun and festive!

Do you have Christmas Taste memories?  Possibly specific cookies that are nostalgic and you look forward to every year?  Maybe Santa doesn’t get all the cookies on his tray each year?  Well wait to you taste these babies-  Straight from the Polar Circle.

Yeti Balls have leveled-up our traditional Holiday Snowball cookie.  With green-hued pistachios and red dried cranberries.   These little balls, or melt in your mouth shortbread cookies are a family favorite (and the Yeti’s don’t seem to mind!).  Yeti Balls, or Cranberry Pistachio snowball cookies, are soft and tender, with some sweetness and salt- and of course the nuts!

Here’s what you need to make Snowball cookies with

Cranberry and Pistachio

  • Stand Mixer
  • Baking sheet
  • Cooking Spray and Parchment Paper
  • Large bowl
  • Parchment paper or a silicone mat
  • Flour
  • Pistachios
  • Craisins
  • Sugar
  • Butter
  • Vanilla Extract
  • Powdered Sugar or Confectioners sugar (to roll the cookies in)

Prep Time: 15 minutes

Active Time: 12 minutes

Total Time: 27 minutes

  • 1 Mixer
  • 1 cookie sheet
  • 2 cups Flour
  • ¾ cup Pistachios (finely chopped)
  • ½ cup Craisins (Finely diced)
  • ¼ cup Sugar
  • 1 cup Butter (Softened)
  • 2 tsp Vanilla
  • ¾ cup Powdered Sugar (For cookie decoration)
  • Preheat oven to 400℉,
  • Spray a cookie sheet with cooking spray and then line with parchment paper (Paper stays in place)
  • Combine all ingredients (except for powdered sugar) in the mixing bowl
  • Beat the ingredients at a low speed. Scraping the bowl as needed to combine all of the ingredients. (Beat just until well-mixed)
  • Shape the dough into 1 inch balls and place on the prepared cookie sheet.
  • Place the cookie sheet in the oven and bake for approximately 10 minutes (or until the balls brown slightly)
  • Remove your Yeti Balls from the oven, and let them cool for 2-3 minutes
  • Roll the balls in a small bowl of powdered sugar. (Since they are still warm I like to roll them around with a spoon)
  • Put on a platter and serve- Try them warm- Yum!

How long will snowballs cookies last?

These cookies can last 6-7 days if stored in an airtight container at room temperature

Can I freeze baked snowball cookies?

Yes.  These cookies freeze well.  Freeze the balls on your cookie sheet, and then gather them in an airtight container in the freezer for up to a month- and let them sit out o the counter to thaw before eating.  We recommend rolling for a second time int he powdered sugar, as some of the sugar may dissolve when thawing.

Can snow ball cookie dough be frozen?

Yes. You can freeze the balls of dough to bake later.  Once they are baked, you can roll them in powdered sugar.

When making Snowball cookies does the butter temperature matter?

Yes. You want the butter to be softened but not melted.   If the butter is too soft, your cookies could flatten while baking.  Some recipes will place the dough balls in the refrigerator for 15 minutes before baking to help them retain their round shape.

Are Snowball cookies the same as Italian Wedding cookies?

Snowball cookies are similar to Italian Wedding cookies. Italian wedding cookies are often made with almonds and sometimes shaped into a crescent moon shape before baking.  Other similar cookies include Butter cookies, Viennese Crescents, Russian Tea cakes, and Mexican Wedding cookies

Tips for Pistachio and Cranberry Snowball Cookie Recipe

  • When you make Cranberry pistachio snowball cookies, be sure to use real butter that is softened – but not melted
  • Use a 1 inch cookie scoop if available.  Gourmet Snowball cookies look bake better when the are close to the same size.  They also look nicer on your cookie tray.
  • Remove from oven and let the cookies cool a little, but coat the cookies while warm.  The powdered sugar seems to stick better if they are dusted while warm.  Absolutlely delicious!
  • To add a little more zing, you could add orange zest to this recipe
