Make these heavenly peanut butter cookies for less than 25 cents each

November is Peanut Butter Lovers Month and, whether you’re a fan of creamy or crunchy, it’s a time worth celebrating. And we’ve got a great way to do that — with a warm, freshly baked cookie right from the oven. And to stick with the theme, this cookie must have peanut butter.

This recipe is courtesy of Melanie Bauer, creator of Melanie Makes, a site dedicated to “making every day more eating interesting.” And she’s certainly done that with this recipe.

Bauer developed what she calls Cheesecake Stuffed Chocolate Peanut Butter Cookies. Yes, that’s cheesecake inside a peanut butter cookie. Added bonus? The entire delicious recipe should cost less than $8 (Bauer estimates $7.33) — maybe even less if you use these tips to buy eggs on the cheap.

So, whether you’re looking to celebrate Peanut Butter Lovers Month, need a new holiday cookie recipe or just want a treat, your taste buds will thank you for this one.

This recipe should make about three dozen cookies, depending on how big you make each one.

Cheesecake filling

  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar

Chocolate peanut butter cookies

  • 1 cup vegetable shortening
  • 1 cup brown sugar
  • 1 cup sugar
  • 2 eggs
  • 1/4 cup hot water
  • 2 teaspoons vanilla
  • 2-1/2 cups flour
  • 1/2 cup cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups peanut butter chips

Instructions

Preheat oven to 375 degrees.

In a medium bowl, mix together cream cheese and powdered sugar until smooth. Set aside.

In an electric mixer bowl, cream together shortening, brown sugar and sugar. Add eggs, water and vanilla and mix until combined.

Add flour, cocoa powder, salt and baking soda and mix until just combined. Stir in peanut butter chips.

Using a medium cookie scoop, fill 1/3 full of cookie batter. Place a teaspoon sized ball of cheesecake filling in the center and cover and fill scoop with additional cookie batter.

Place dough on parchment or silicone lined baking sheets and bake for 10 to 12 minutes or until just set.

Allow to cool on baking sheets for two minutes prior to moving to cooling racks to cool completely. Enjoy!
